I think to of the best books on Mormon art are People of Paradox: A History of Mormon Culture and Writer in Zion by Orson Scott Card.

Nice selection of art. Did I tell you we've not got a large poster of "Nativity" on our wall?
I might also add "folk of the fringe" (at least that first novella) to the list but I suppose Orson is already overly well represented.
